French Toast Casserole

Caramel, cinnamon, brioche… what’s not to love about this French Toast Casserole? Bake it right away or make it up the night before for an easy, wholesome breakfast everyone will love.

Ingredients for French Toast Casserole

  • 1/2 cup butter
  • 1 cup packed light brown sugar
  • 1 loaf brioche-style bread (I use Nature’s Own Thick-Sliced Brioche Style)
  • 6 eggs
  • 2 cups milk
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional)

How to Make French Toast Casserole

  1. Preheat oven to 425 degrees.
  2. In a medium microwave-safe bowl, melt the butter. Add the brown sugar to the hot butter and whisk until smooth, about a minute.
  3. Pour the brown sugar mixture into the bottom of a greased 9X13 pan.
  4. If using chopped pecans, sprinkle evenly over the brown sugar mixture.
  5. Cut the bread into 1-inch cubes and spread into the pan over the brown sugar mixture. Do not stir.
  6. In a medium bowl, whisk together the eggs, milk, vanilla, salt, and cinnamon.
  7. Pour the egg mixture over the bread and gently pat down the bread to make sure all the pieces are saturated.
  8. Bake for 30-35 minutes or until the top is golden brown.
  9. Serve with maple syrup and more chopped pecans, if desired.

What to Serve with French Toast Casserole

  • Bacon or sausage (try these Easy Baked Sausage Patties)
  • Fresh fruit, such as sliced strawberries, bananas, or blueberries
  • Whipped cream
  • Powdered sugar
  • Chopped pecans

Make It Ahead

This French Toast Casserole recipe is great made up and baked immediately. But for an quick, fresh, home-baked breakfast, make up the casserole the night before and cover and refrigerate it overnight. In the morning, uncover and lay out the casserole while your oven preheats, then pop it in and bake it for 35-40 minutes. Convenient and delicious!
