Pecan Sandies

Everyone loves these rich, buttery shortbread cookies packed with pecans. Easy to make, but easier to devour!

Ingredients
  

  • 1 cup 2 sticks butter, softened
  • 1/3 cup brown sugar packed
  • 1/4 cup sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1 1/4 cups chopped pecans

Method
 

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, beat together softened butter and sugars for 3-4 minutes, or until fluffy.
  3. Add vanilla and mix until well combined.
  4. In a separate small bowl, whisk together and salt.
  5. Add flour mixture to butter mixture and mix until just combined. Do not overmix.
  6. Roll dough into walnut-sized balls and place on a parchment-lined baking sheet.
  7. Flatten each ball slightly with a glass so they're about two inches in diameter.
  8. Bake 10-12 minutes or until the edges are just golden.
