Coconut Oatmeal with Dried Cherries

  • 1 cup quick oats
  • 1 cup water
  • 3/4 cup milk
  • 1/2 cup dried cherries
  • 2-3 tablespoons brown sugar sweeten to taste
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flakes

Method
 

  1. In a medium saucepan over medium-high heat, stir together oats, water, milk, dried cherries, brown sugar, and salt.
  2. Stir often until the mixture comes to a boil, then stir constantly for a minute or two, until the mixture has thickened.
  3. Stir in the vanilla and coconut.
