White Chocolate Macadamia Cookies

Ingredients
  

  • 2/3 cup white sugar
  • 1/2 cup butter at room temperature
  • 1 egg at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup macadamia nuts chopped
  • 1 cup white chocolate chips

Method
 

  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream together the butter (at room temperature) and sugar until fluffy, about 5 minutes.
  3. Add the egg (at room temperature) and vanilla extract to the mixture and beat until well combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Stir in the chopped nuts and white chocolate chips.
  7. Drop walnut-sized spoonfuls of dough onto parchment-lined baking sheet, spacing at least 2 inches apart.
  8. Bake 10-12 minutes, or until the edges are golden.
