The Best Homemade Granola Recipe (Easy and Healthy!)

This easy homemade granola recipe is crunchy, lightly sweet, and full of healthy fats and whole grains—perfect for a quick breakfast!

Ingredients
  

  • 1 1/2 cups old fashioned oats
  • 1 cup chopped pecans or different nuts if desired
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • Dried fruit optional

Method
 

  1. Preheat oven to 350 degrees and move oven rack to the center position.
  2. ​In a large bowl, combine oats and pecans.
  3. In a separate microwave-safe bowl, melt coconut oil by microwaving for about 20 seconds.
  4. To the coconut oil add honey, vanilla, salt, and cinnamon and stir until well combined.
  5. Pour the oil-honey mixture over the oats mixture and stir well to coat evently.
  6. Pour granola onto a parchment-lined large baking sheet and bake about 20 minutes, or until golden, stirring halfway through.
  7. Remove from the oven and let sit until cooled. After cooled, break up and store in an airtight container. Enjoy!
  8. If adding dried fruit, add to the granola AFTER baking, while granola is still warm. Do NOT bake the fruit - it will burn.
