Soft and Chewy Oatmeal Chocolate Chip Cookies

Ingredients
  

  • 1/2 c. butter softened
  • 1/2 c. packed light brown sugar
  • 1/4 c. granulated sugar
  • 1 egg room temperature
  • 1 tsp. vanilla extract
  • 1 c. all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 1/2 c. quick oats
  • 1 c. semisweet chocolate chips

Method
 

  1. Preheat oven to 350 degrees.
  2. In a medium-sized bowl, whisk together flour, oatmeal, baking soda, and salt.
  3. In a larger bowl, beat butter, brown sugar, and granulated sugar about 2 minutes, or until fluffy.
  4. Add the egg and vanilla and beat until well combined.
  5. Add flour mixture to wet ingredients and mix until well combined.
  6. Stir in the chocolate chips.
  7. Roll into walnut-sized balls and place on a parchment-lined baking sheet, spaced about two inches apart.
  8. Press each dough ball gently with your fingers to flatten slightly.
  9. Bake about 10 minutes, or until edges begin to brown.
  10. Cool slightly before serving.
