Ingredients
  

  • 1.25 to 1.5 pounds chicken tenderloins
  • 4 Roma tomatoes chopped
  • 2 cloves garlic finely minced
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • A splash of balsamic vinegar
  • 1 cup whole milk low moisture mozzarella cheese, shredded
  • A drizzle of balsamic glaze for serving if desired

Method
 

  1. Preheat oven to 350 degrees.
  2. Place chicken tenderloins in a greased 9X13 baking dish.
  3. In a medium bowl, combine roma tomatoes, garlic, basil, salt, pepper, and balsamic vinegar.
  4. Spoon the tomato mixture over the chicken and then sprinkle cheese evenly on top.
  5. Bake for 35 minutes, or until chicken is cooked through.
  6. Drizzle with balsamic glaze before serving, if desired.
