Ingredients
  

  • 8 large bone-in chicken thighs with skins on
  • 1 1/2 tablespoons avocado oil or olive oil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika or smoked paprika, if desired
  • 1/2 teaspoon dried parsley

Method
 

  1. Preheat your oven to 400°F.
  2. Pat chicken dry with a paper towel. Arrange the thighs skin-side up on a rimmed baking sheet lined with parchment paper.
  3. In a small bowl, whisk together oil, salt, black pepper, garlic powder, paprika, and parsley.
  4. Drizzle oil mixture all over the chicken thighs and then rub to evenly coat.
  5. Bake the thighs for 35-40 minutes until golden brown and cooked through (juices should run clear). The chicken should reach an internal temperature of 165°F for safe eating.
  6. Let the chicken rest a few minutes before serving to keep the juices locked inside.
