Copycat Chipotle Corn Salsa

Ingredients
  

  • 2 cups frozen corn kernels thawed
  • 3 tablespoons fresh cilantro finely chopped
  • 3 tablespoons red onion minced
  • 2 tablespoons fresh jalapeno pepper finely chopped
  • Juice from half a lime
  • 1/2 teaspoon salt

Method
 

  1. Finely chop the cilantro and pepper. Mince the onion.
  2. If using corn on the cob (vs. frozen corn kernels), boil the corn on the cob for 5-6 minutes, cool, and cut the kernels from the cob. Separate kernels with a fork.
  3. Add pepper, onion, cilantro, salt, and lime juice to the corn and mix well.
  4. Refrigerate until serving.

Notes

Bell pepper may be substituted for the jalapeno pepper for a milder version.
Fresh corn kernels may be substituted for the frozen corn kernels.
Best if refrigerated at least 30 minutes before serving.
