This quick and easy microwave method for spaghetti squash delivers tender, noodle-like strands in just 20 minutes!

If you’ve ever wondered if there’s an easy way to cook spaghetti squash, look no further. Microwaving is the fastest and easiest way to get those tender, noodle-like strands without heating up your oven. With just a glass microwave-safe dish, a very sharp knife, and an inch of water, you’ll transform a whole squash into a delicious, low-carb, easy side dish that is super versatile.

This microwave method is my favorite way to cook it, especially on busy weeknights when time is tight. 

Why Microwave Spaghetti Squash?

Spaghetti squash is a fan favorite in the world of healthy recipes. Its long strands mimic traditional spaghetti noodles without all the carbs. It’s packed with nutrients like vitamin C and is naturally gluten-free.

Microwaving is the best way to get dinner on the table faster. The cooking process is simple, mess-free, and perfect for beginners.

Tools You’ll Need

  • Sharp knife
  • Cutting board
  • Microwave-safe glass baking dish
  • Oven mitts
  • Fork for fluffing strands

Ingredients

  • 1 whole spaghetti squash
  • ​1 inch of water in baking dish
  • Toppings of your choice, such as oil, salt and pepper; freshly grated parmesan cheese; or pasta sauce 

Simple Steps to Microwave Spaghetti Squash

  1. Wash the squash. Use water and a clean towel to remove any dirt from the outside of the squash.
  2. Cut the squash in half lengthwise. Use a very sharp knife on a flat surface to safely cut the stem off the squash and then cut the squash in half from top to bottom lengthwise. 
  3. Scoop out the seeds. Remove the seeds and stringy pulp from the middle of the squash with a spoon. 
  4. Place the squash halves cut side down. Position each half flesh-down in a glass microwave-safe dish. The flesh of the squash should be touching the bottom.
  5. Add one inch of water. This helps create steam inside the microwave.
  6. Microwave on high for 20 minutes. Microwave times may vary slightly depending on the size of the spaghetti squash and the strength of your microwave oven. You know it’s done when you can easily pierce the flesh with a fork and get spaghetti-like strands when scraped. 
  7. Let it cool. Use an oven mitt to remove the hot dish. Let the squash halves rest for a few minutes before handling.
  8. Fluff with a fork. Turn the halves over and gently scrape the spaghetti-like strands from the flesh of the squash.
  9. Season and serve. Add a little olive oil, parmesan cheese, or your favorite pasta sauce to complete the dish.

Tips for Success

  • If you’re nervous about cutting, poke holes in the whole thing and microwave for 3–5 minutes first to soften. 
  • Halving the squash lengthwise is easier if you first cut off the stem.
  • A larger squash may need more cooking time. A small one might need less time.
  • For storage, use an airtight container. Keep in the fridge for 3 to 4 days.
