This easy breakfast scramble is made with simple ingredients and comes together quickly, making it a kid-friendly, crowdpleasing go-to recipe.

Ingredients for Breakfast Scramble

  • 1/2 pound pork sausage, such as Good & Gather All-Natural Sausage
  • 8 eggs
  • 1/2 cup milk
  • 1/8 teaspoon pepper
  • 1/4 cup shredded cheese

Directions for Making Egg and Sausage Breakfast Scramble

  1. Over medium-high heat, cook sausage until no longer pink, breaking it up as it cooks. Drain off excess grease.
  2. While the sausage cooks, in a medium bowl, whisk together eggs, milk, and pepper.
  3. Pour into the skillet with the sausage and sprinkle cheese on top.
  4. Cook, stirring constantly, until eggs are cooked thoroughly.
  5. Sprinkle with additional cheese to serve, if desired.

Note: I did not add salt as an ingredient, but feel free to add salt to taste. I find that with the addition of cheese (depending on the type) it’s often salty enough.

What to Serve with Quick and Easy Breakfast Scramble

Here are some suggestions on what to serve alongisde this quick and easy breakfast scramble:

  • Fresh tomato slices
  • Avocado
  • Fresh fruit, such as strawberries, blueberries, and bananas
  • Biscuits

Variations

  • Saute some onion and/or mushrooms and add to the egg mixture as well.
  • Have access to fresh herbs? Throw in or top with fresh chives, thyme, parlsey, or dill.
  • Leftover hashbrowns are also great in this recipe. Throw cooked hashbrowns into the egg mixture just after they’re added to the meat.
  • Instead of sausage, cut up and fry bacon or ham. Just as with the sausage, be sure to drain off excess grease after the meat is cooked.
  • Feel free to use egg substitute or egg whites only instead of whole eggs.
  • Top with fresh diced tomato or avocado for a boost of flavor and nutrition.
  • Mix up your cheese: it’s great with cheddar, pepper jack, colby jack, mozzarella, or even Velveeta Shreds.
