Over the years, I have become a huge fan of sweet potatoes. In fact, I rarely buy regular russet potatoes anymore and look for ways to replace potatoes with sweet potatoes in recipes. Not only are they healthier, but they add a natural sweetness, cutting down or eliminating altogether the need for adding sugar or other sweeteners.
When deciding what dishes pair well with a sweet potato side dish such as this, the options are endless. Beef, chicken, pork… in my humble opinion, you can’t go wrong. Following the popular advice to “eat the rainbow,” I do like serving sweet potatoes alongside a salad or green vegetable.
This is definitely one dish I always feel good about eating. Our kids love it, too!
Ingredients
- 2 large sweet potatoes, peeled and diced into 1/2-inch cubes
- 2 tablespoons real maple syrup, such as Butternut Mountain Farm 100% Real Maple Syrup
- 2 tablespoons olive oil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon pepper, or to taste
How to Make It
- Preheat oven to 425 degrees.
- Peel and dice sweet potatoes into 1/2-inch cubes.
- Pour maple syrup, olive oil, salt and pepper into a gallon-size bag (a large bowl works well, too) and squish with your fingers until well combined.
- Add diced sweet potatoes to the bag, seal the bag, and shake well to coat.
- Pour the sweet potatoes onto a parchment-lined baking sheet in a single layer.
- Bake about 40 minutes, stirring gently every 10-15 minutes. Sweet potatoes are done when they are fork-tender and caramelized with brown edges.
