Creamy beef stroganoff doesn’t get any better than this! Comfort food at its finest. Only one pot to clean up, too!
This is a dish everyone in our family can agree on. Yes, it’s perfect for the coldest of winter days, cozied up next to the fire, but we eat it year-round. It’s one of those meals that just feels good, ya’ know?
And when it’s time for cleanup, there’s only one pot to clean. How great is that?!
Ingredients for Easy One Pot Beef Stroganoff Recipe
- 2 tablespoons butter
- 1/2 cup yellow onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 pound ground beef
- 3 tablespoons flour
- 4 1/2 cups beef broth (try using Better Than Boullion Beef Base to make the broth)
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dijon mustard, such as Grey Poupon Dijon Mustard
- 2 cups egg noodles, uncooked
- 1/2 cup sour cream
- Salt and pepper, to taste
- Fresh parsley and/or Parmesan cheese for serving (optional)
How to Make Easy One Pot Beef Stroganoff Recipe
- Melt the butter in a large pot over medium heat.
- Add the sliced mushrooms and chopped onion and cook about 4 minutes, or until the mushrooms are tender and the onion is beginning to turn translucent. Season with salt and pepper.
- Add ground beef and cook about 5 minutes, breaking up the meat as it cooks.
- When the meat is no longer pink, drain off excess grease and then add the garlic and cook for another minute or two.
- Stir in the flour and cook for 1 minute.
- Stir in the beef broth, dijon mustard, Worcestershire sauce, and uncooked egg noodles.
- Bring to a boil, then cover and simmer for about 10 minutes, or until the pasta is cooked. Season with salt and pepper, to taste.
- Stir in the sour cream and cook just until heated through, about 2 minutes.
- Spoon into bowls and top with parsley and/or freshly grated Parmesan, if desired.
