Cheesy Chicken Macaroni Casserole {Bake Now or Make Ahead!}

This cheesy chicken macaroni casserole recipe comes together so quickly with few ingredients. It’s also a great way to use leftover chicken!

Ingredients for Cheesy Chicken Macaroni Casserole

  • 1 1/2 cups macaroni (uncooked for measuring, but it will be cooked for the recipe)
  • 1 1/2 cups milk
  • 2 cans condensed cream of mushroom soup (or cream of chicken, celery, or whatever you have on hand)
  • 2 cups cubed cooked chicken
  • 1 cup shredded cheese, plus 1/4 cup for topping (topping optional) – Velveeta Shreds are great in this recipe
  • 1/2 teaspoon pepper
  1. Preheat oven to 350 degrees.
  2. Grease a casserole dish 2 1/2- to 3- quart casserole dish.
  3. Cook the macaroni according to package directions, reducing the cook time by 1-2 minutes since it will finish cooking in the oven. Drain well.
  4. In a medium bowl, combine the milk, condensed soups, pepper, cheese, and cooked cubed chicken.
  5. Add the macaroni to the soup mixture and pour into the greased casserole dish.
  6. Top with additional cheese, if desired, and bake for 30-35 minutes or until bubbly.
  7. Enjoy!

Make It Ahead

Want to make this cheesy chicken casserole ahead of time? It saves on cooking time, too!

Ingredients List if Making It Ahead:

  • 1 1/2 cups UNCOOKED macaroni
  • 2 cups milk
  • 2 cans condensed cream of mushroom soup (or cream of chicken, celery, or whatever you have on hand)
  • 2 cups cubed cooked chicken
  • 1 cup shredded cheese, plus 1/4 cup for topping (topping optional) – Velveeta Shreds are great in this recipe
  • 1/2 teaspoon pepper

Directions for Making It Ahead

  1. Combine all ingredients and pour into greased casserole dish.
  2. Top with additional cheese, if desired.
  3. Cover with foil and refrigerate overnight – or at least 8 hours – prior to baking.
  4. When you’re ready, uncover and bake at 350 degrees for 45 minutes or until bubbly and heated through.
  5. Enjoy!
